In a large bowl, take some flour, sugar, salt, baking soda and some cocoa powder, in another bowl, mix together oil, buttermilk, vinegar, food colours, eggs and vanilla.
Using a hand mixer, mix the ingredients till they are combined well and a smooth batter is formed. Divide the mixture into cake pans and place the pans evenly placed apart. Bake till around thirty minutes and check preparedness using the usual toothpick trick.
Remove the cake pieces with care using a knife and cool them well on a cooling rack.
Place one layer, and cover its top and sides with frosting, cover it with another layer, cover that with frosting over which place the last layer. Cover the entire cake with frosting and sprinkle top with pecans.
As for the frosting- In a mixer with a paddle attachment, or if you have a hand-held electric mixer, take in a bowl, and mix the following: cream cheese, butter, sugar on low speed until they are mixed well. Increase speed to high, and keep the mixer running until lower speed of the mixer. Add vanilla, and raise the speed to high and mix some more, briefly until fluffy. Store in the refrigerator until slightly stiff, before using. May be stored in the refrigerator for 3 days."
