This natural dye gave rise to the name Red Velvet as well as other names like “Devil’s food” and the like. When food was strictly rationed during World War II, bakers used to use boiled beet juice to improve the colour of their cakes. Traditionally, the cake is glazed with a layer of French style roux, which is very light and fluffy but it takes a long time to prepare. Glazes based cream cheese and buttercreams are variations that have been increasing in popularity. In Canada, the cake was well known in restaurants and pastry shops as Eaton’s in the decades of 40 and 50. Billed as an exclusive recipe of Eaton’s, where employees who knew swore silently, many people believe erroneously that the cake was the invention of the matriarch chain, Lady Eaton.

Red Velvet Cake Recipe
Instructions
  1. Sieve all the powder ingredients to avoid leaving lumps (flour, sugar, cocoa powder, salt, and yeast).
  2. Beat the eggs for about a minute and add the oil slowly, then a teaspoon of vanilla extract/essence, yoghurt, a tablespoon of the food colouring and finally add the vinegar.
  3. Add the colouring to the wet mixture while progressively beating the previously sifted ingredients. To prevent the dough from turning too dry, add 3 tablespoons of milk at the end and beat some more.
  4. Pour the mixture into a mould that has been previously greased with butter and floured and put it in a preheated oven at 180 degrees until a toothpick is inserted in the centre of the cake and it comes out dry. (About 40 minutes)
  5. While the cake cools, beat the cheese and butter, then add the vanilla extract and a pinch of salt. Finally, add the icing sugar gradually until you get a mixture that makes peaks and looks consistent.
  6. Unmold the cake and cut it in 3 pieces to stuff the filling. We intersperse each layer of the cake with frosting. Finally, we cover the entire cake with frosting and decorate it as per our liking.

Why are these ingredients required?

Flour and sugar are the basic ingredients to make any cake. Cocoa powder lends a very sinful chocolaty taste to the red velvet cake that will leave your taste buds tingling. A pinch of salt is added to accentuate the flavour of the sugar that will do a happy dance on your tongues. Yeast is used for making the cake rise and it gives a wonderfully spongy and light texture to the cake. Eggs are used as a binding agent to bind all the ingredients together and sunflower oil and yoghurt provide an amazing softness and moistness to the cake. The beets or the red food colouring provide the cake with a passionate red colour and the vanilla extract is added for added flavour. Vinegar is added for its incredibly sharp flavour to lift the batters as they bake and finally, milk helps the cake batter from drying out and gives it a wonderful moistness and fluffiness.
